Cooking once for several meals is a great idea.I used to prepare food like this a lot when my kids were younger. I used to prepare ground beef for Tacos in two batches and freeze one. In a week or so I would thaw the frozen batch and make Nachos Grande. It made weeknight cooking a breeze.
